Karhai Chicken/Lamb (Wok Fried Meat Dish)

Ingredients and spices are listed but everything is to your individual taste.

Chopped up onion and then fry
Add tomatoes chopped 
Add fresh garlic 
Add green chillies (optional)
Fry well before adding the chicken
Add chicken
Add salt
Add haldi (turmeric)
Add chilli powder
Add cumin powder
Add black pepper
Cook until you see oil coming to top and separation
Add yoghurt
Add a little of fresh ginger chopped up
Fry under a good high flame until you see more oil separation
Then add gharam masala – fresh is best (bhajias gharam masala on YouTube is good)
When its finished, garnish with sliced up ginger and cilantro

This recipe also works well with lamb.
The key is the gharam masala at the end.
