Kibbeh-Meat Stuffed Croquette


1 cup Bulgar wheat

1 cup water 

½ kilo ground meat ( beef or lamb) -Try our Organic Angus Beef, or Organic Lamb!

2 Onions 

Salt, Black pepper, Allspice, Cinnamon, Cardamom


1- Soak the Bulgar wheat in water for 15- 30 minutes – rule of thumb when using Bulgar in cooking, the ratio of Bulgar wheat to water is 1:1 

2- Add the meat to the bulgur and mix well with the spices 

3- In the food processor add the mix of Bulgar and meat and grind well, add the onions to the mix too. This way you will form the Kebbeh dough, that you can use to form the kebbeh rolls stuffed with cooked ground meat and then you fry OR you can use this Kebbeh dough to spread it in the pan to make Kebbeh bil sinyyeh.

To make the Kebbeh rolls:

Form the kebbeh dough into balls, then form each ball into a cup like shape and stuff with the cooked meat. You may add some pine nuts to the meat mix. Deep fry the rolls in hot oil until brown in color. Serve hot with veggies on the side or yogurt.

To make the Kebbeh in the pan ( Kebbeh bil sinyyeh)كبه بالصينيه

To make one pan, spread 2/3 of the kebbeh dough in the bottom of the pan. Spread the cooked meat mix, then the rest of the kebbeh dough by flattening with your hands, you may want to dip your fingers with water to help spread the dough evenly on the top. You may use pine nuts in the filling and to garnish the top. Bake in 350 degree Fahrenheit oven for 12-15 minutes, or until edges are golden brown. Serve hot
