steak salad with arugula and grapefruit

  • 1 pound(s) sirloin steak, trimmed of excess fat
  • Kosher salt, (optional)
  • Pepper
  • 2 red or pink grapefruits
  • 2 tablespoon(s) fresh lime juice
  • 2 tablespoon(s) olive oil
  • 1 small avocado
  • 6 cup(s) baby arugula
  • 2 cup(s) fresh cilantro
  • Unsalted roasted pepitas (hulled pumpkin seeds), for serving

  1. Heat broiler. Line a broiler-proof rimmed baking sheet with foil. Place the steak on the prepared pan and season with 1/4 teaspoon each salt (if using) and pepper. Broil to desired done-ness, 4 to 5 minutes per side for medium-rare. Transfer to a cutting board and let rest for at least 5 minutes before slicing.
  2. Meanwhile, cut away the peel and white pith from the grapefruits. Cut the grapefruits into segments. In a small bowl, whisk together the lime juice, olive oil, and 1/4 teaspoon each salt (if using) and pepper.
  3. Dice the avocado. In a large bowl, gently toss the arugula, cilantro, avocado, grapefruit, and sliced steak. Drizzle with the lime juice mixture and sprinkle with pepitas, if desired.

Healthy Tip: Red meat can be part of a healthy diet when eaten in moderation. The American Heart Association recommends limiting lean meat, skinless chicken, and fish to less than six ounces per day, total. Broiling, which requires no fat, is an easy, healthy cooking method.
